Panettone 

First Night: 

Two steps- create the sponge & fruit blend. 

Weigh out the starter, flour & warm milk. 

I accidentally over heated this & had to let it cool down. 

I ordered candied fruit. And didn’t realize exactly what it was. I’m not completely sure and kinda creeped out. I didn’t like the taste. So, I reduced the amount & added extra raisins to get the correct weight. Being that they’ll soak overnight in booze & extracts, I’m hoping for the best. 

Stir the sponge together & leave it out for four hours then refrigerate overnight.
